This is one of my very favorite breakfast recipes. It is so light and refreshing and delicious! I’ve also been known to enjoy it for dessert!
Apple and Lemon Quinoa Breakfast Delight
4 cups cooked quinoa chilled (any color or multicolor quinoa is fine)
2 cups organic unfiltered apple juice
1 tsp. cinnamon
1 tsp. vanilla
½ cup slivered almonds
1 whole organic lemon plus the zest (if you like zest) (minus the seeds)
1 cup Craisins™ or raisins
Stir and enjoy!
